We are so lucky to have an array of small businesses that make absolutely cracking food in the Southern Highlands, NSW.
So here we go.....
Ms Peacocks Fine Chocolates made an ode to the lamington - a la marshmallow! The Glamington. Vanilla bean and raspberry marshmallow, dipped in milk chocolate and coated in coconut. Giving off allllll the lamington vibes. I don't think I've ever had something from Ms Peacocks that I wouldn't buy again... and again.... and again.... and again.
Now to Gumnut Patisserie for their lamington - available all year round! No cream and jam filling made me nervous, because sponge can be dry. But not needed here! The sponge was so fresh and amazing and the chocolate coating was (with lack of a better word) MOIST. It was beautiful and can't fault it.
Chelsea Bakery came highlyyyy recommended by locals! No cream or jam in sight here either! But oh my gosh the sponge was so incredibly soft and pillowy. Super yummy.
Ok back to another local doing their twist on the lamington - Lee Lee's Cupcakes! A cupcake version of a lamington. Now, Alicia makes buttercream that's second to none - and this lamington flavour was exception. Vanilla cuppy, topped with jam, topped with chocolate buttercream, topped with coconut. Think lamington plus an indulgent layer of icing - you can't go wrong!!
And that's my job done! 4 lamingtons tried and tested. All delicious too!
Now, tasting lamingtons wasn't all rainbows and butterflies. My car is full of shredded coconut and I was up at night with reflux. But I have zero ragrets!!
